Pantry Stock

The Pantry Food Stock below is related to ‘The Plant Paradox’ by Dr. Steven Gundry, whose research into the area of ‘Hidden Dangers in “Healthy” Foods that Cause Disease and Weight Gain’ has eliminated quite a few of my popular choices that I had considered to be healthy and beneficial in my approach to my own health.  Dr. Gundry has intensely researched ‘lectins’, a class of proteins, chiefly of plant origin, which bind specifically to certain sugars and so cause agglutination of particular cell types. Some of the foods I dropped as a result were cashew nuts, chia seeds and beans. Beans, however, can be eaten if cooked in pressure cookers to minimize their lectin content.

Some foods are not on his list, but I have added with a comment on how to use them with the proper preparation:


  • Anchovies

  • Arrowroot

  • Brazil nuts

  • Champagne

  • Chestnuts

  • Cranberries (unsweetened)

  • Dark Chocolate (72 % or greater)

  • Flours (coconut flour, almond flour, hazelnut flour)

  • Herbs except chilli pepper flakes

  • Miso

  • Nuts (Almonds without skin, Brazil nuts, Hazelnuts, Macadamia nuts, Pistachios, Pine nuts, Walnuts,)

  • Oils (Avocado oil, Olive oil, Linseed oil, Flaxseed oil)

  • Olives

  • Pepper

  • Quinoa

  • Red wine

  • Salts (Himalayan, sea salt or other quality salts)

  • Seeds & Spices (cumin seeds, cardamom, aniseed, caraway, cinnamon, fennel seeds, flaxseeds, hemp seeds, sesame seeds)

  • Teas (green teas, high quality herbal teas, chai)

  • Turmeric / curcumin

  • Vinegar
