Recipes For Special Occasions

People may wonder why I am having a healthy blog and still include seafood or meat. I see it as a choice that doesn’t rigidly force anything on myself or others.

For myself, I see it as a special treat and I choose the quality of the meat or seafood very consciously. As much as I am aware, the meat should be grass-fed and pasture raised, the seafood wild-caught and the poultry especially should be not just free range, but from ‘happy chickens’ that have more than a very limited space to move.

When I had a dinner party last night, I decided to create a ‘rainbow theme’, as it makes the choices of the food and ingredients much easier:

RED COMPO WITH DRUNKEN PEAR
The Red Composition

FLATHEAD on drunken pear with wine reduction, dragon-fruit and edible flowers

Orange composition
The ORANGE Composition

Salmon and Prawns on baked sweet potatoe

YELLOW SCALLOP SUBMARINE
The YELLOW Composition

Turmeric Scallops on Mash with sage-butter

PURPLE DESSERT COMPOSITION
Purple Dessert

Baked Nectarine with Chia and Tapioca
