Scallops on Sweet Potato Mash

Ingredients and Method

3 Scallops per person, light touch of turmeric powder and fried in coconut oil, placed on

1 tablespoon of sweet potato mash and topped with

sage, hazelnuts/pinenuts, one tomato (peeled and de-seeded) and 1 peeled & cut lime, all gently fried in butter

decoration: Marigold petals and pepper
